A Toast! (with leftover Honey Plum Syrup)

I did it! I pushed the publish button! And that calls for a cocktail!

IGin Honey Plumt’s winter and there’s not a whole lot growing around here this time of year except hearty greens. As for fruit we have apples and pears, and I’m already tired of them. This is when I am most grateful for my preserving hobby and the jars of summertime that I have stashed away in the pantry. We recently polished off a jar of plums in honey syrup (recipe coming this summer when plums are back in season) and not wanting to waste even a drop of that summer-time goodness I took the leftover syrup added gin, my second-favorite liquor (bourbon’s #1, thanks for asking), a little fizzy water, a squeeze of lime and voila! something refreshing to sip while dreaming of sweet, warm sunshine.

IGin Honey Plum Pieces choose gin (I really like this one) to go with this particular syrup because I love the spicy, piney flavor that it adds to the smooth plum base but you’re welcome to switch out for vodka or go booze-free and omit it altogether. I have a hard time sticking to a recipe all the way through so I don’t expect you to follow mine to a ‘T’ either. Use what you have considering how the flavors will meld and go for it! If it doesn’t work out, you’ll know for next time.

It’s a simple treat and probably not worthy of an actual recipe but it makes me happy and reminds me not to be wasteful by using up absolutely everything in the jar. Speaking of EVERYTHING in the jar, I stuck a vanilla bean in these plums last summer and it is now happily making vanilla sugar (which I’ll share with you in a couple weeks when it’s fully vanilla-fied).

Gin Honey Plum


  • ¼ - 1/3 Cup Honey Plum Syrup
  • 1 oz Gin
  • 1 Cup Fizzy Water (more or less depending on your taste)
  • 1 Wedge Lime


  1. Fill your glass with ice then layer in the syrup and gin.
  2. Give it a quick stir before adding the fizzy water.
  3. Top with a squeeze of lime.
  4. Enjoy!
